Key ingredients: Whey Protein, Unbleached Unbromated whole wheat flour, stevia, and 72% Cocoa powder.
Whey Protein is derived from animal protein not plant protein. * When heated over a long period of time and at high heat, whey protein will denature. We bake our protein cookies in a stone oven which distributes heat evenly, cutting back the amount of baking time and temperature needed to bake a perfect protein cookie that retains all its nutritional value.
When considering the health of our consumers we chose to use an Unbleached Unbromated Whole Wheat Flour. Unbleached Unbromated Flour is flour that has not been subject to bleach and potassium bromate baths.
Bleached Flour – is flour that is subjected to a chlorine gas bath which whitens the flour and reduces the gluten content, resulting in a finer grain. What makes this worse is that the chlorine once combined with the proteins of the flour produces Alloxan – a carcinogen. Although not yet proven in humans, when Alloxan was tested on lab rats it induced diabetes, destroying beta cells in the pancreas.
Bromated Flour – is flour treated with potassium bromate to improve elasticity in the dough allowing it to produce a higher rising bread. Potassium bromate is a potential carcinogen. Bromated Flour has been linked to thyroid dysfunction.

Stevia has been proven to have compounds that are anti-hyperglycemic, anti-hypertensive, anti-inflammatory, anti-tumor, anti-diarrheal, and diurectic. Stevia is safe for diabetics and people suffering from obesity and hypertension do to the negative effects on blood glucose and may even increase glucose tolerance. Stevia has Zero calories, Zero carbs and Zero glycemic Index.
Cocoa is proven to offer extraordinary health benefits. Cocoa contains three flavonoids: Procyanidin,catechin, and epicatechin. These flavonoids help protect against disease like diabetes, heart disease, and high blood pressure. When cocoa is processed with fat and sugar you lose all its health benefits. Therefore we use a cocoa powder that is 72% pure cocoa in all our dark cocoa cookie recipes.
